Tamaki at the "Appetizing Compromise" in Krasnodar: A Southern View of Taste
On May 26, the "Appetizing Compromise" gastronomic event took place in Krasnodar, bringing together chefs, producers, and representatives of establishments from the southern region. Tamaki presented its products through tasting sets and a lively dialogue about gastronomic trends, guest tastes, and solutions for modern restaurant cuisine.
The event included master classes from renowned chefs. Participants were able to learn practical approaches to working with ingredients, discuss signature presentation, consistency of flavor, and solutions that help make kitchen work more convenient and efficient.
The Tamaki team organized a tasting to showcase the character of sauces in prepared dishes. Guests sampled crispy shrimp in a delicate breading and classic rolls with a variety of fillings. Participants paid special attention to Kimchi, Teriyaki, Unagi, and Nut sauces—flavors well known to professional kitchens and widely used in Asian and Pan-Asian dishes.
During the tasting, sauces with a fruity and spicy profile generated considerable interest: Pineapple-Chili, Mango-Chili, and the piquant Wasabi sauce. Sweet and sour fruity notes help highlight the flavors of seafood, poultry, appetizers, and rolls, while the spiciness adds expressiveness to the dishes. Such combinations are especially natural for Southern cuisine: vibrant, rich, and emotional.
